The team at Four Seasons has recently announced their Masterdish collection. They asked the culinary teams from various properties in their extensive collection to choose one dish that they believed visitors would want to know about, and the list is ridiculously yummy.

1. Guava Gelée Stone 
Four Seasons Punta Mita (Mexico) 

Served in the Dos Catrinas Restaurant and designed by Chef Fernando Méndez, this dish, which was inspired by the cobblestones of Talpa, is not as hard as its name suggests. In fact, you’ll find it fresh, light, and full of delicious guava flavor.   

2. Avocado and Cabbage Millefeuille  
Four Seasons Hotel George V (Paris, France) 

Chef Alan Taudon looked no further than to his wife’s Central American roots when seeking inspiration for this dish. This smoky, complex vegetarian dish recreates and shares his sensorial experiences through Mexico

3. Berlingots 
Four Seasons Hotel London at Ten Trinity Square (UK)

Inspired by the Ravioles de Romans and a beloved childhood sweet of the same name, Chef Anne-Sophie Pic of the La Dame de Pic Restaurant created savory Berlingots: pasta parcels filled with Gruyère, Vacherin, and wild mushrooms, dressed with pu’er tea consommé. 

4. Seasonal Vegetable Pici Pasta

Head to the Il Palagio Restaurant, where Executive Chef Vito Mollica will serve up this fresh and crispy pasta dish that celebrates the flavors of Tuscany.  

5. The Long Bone

In the Sidecut Steakhouse, Chef Eren Guryel has caused a media sensation with The Long Bone, a 52-ounce dry-aged ribeye known for its imposing size. Guryel uses only top-quality ingredients in simple preparation—and a rub that will remain a secret. 

6. Baklava Ice Cream

A classic Middle Eastern dessert reimagined by Chef Mohammed Saleem of The Terrace RestaurantBaklava Ice Cream is a hit not only for its impressive presentation but also for its flavor-packed components: layers of pistachio baklava, roasted pistachio and Guanaja chocolate ice cream—topped with silky hot chocolate sauce and a dusting of fresh raspberry sprinkles. 

7. Pineapple Pork Buns 
Four Seasons Hotel Hong Kong  

In the heart of bustling Hong Kong, you’ll find Lung King Heen, where Executive Chinese Chef Chan Yan Tak has dreamt up these delicious and handmade Pineapple Pork Buns. While you’re there, you’ll also want to sample their Argo Martini, which has a citrusy-savory flavor unlike any other.   

8. Ultraviolet

The message behind the Ultraviolet cocktail: spread love and compassion through community, says Director of Restaurants Gustavo Goncalves, the drink’s creator. The sensory experience at Xiao Ting Restaurant begins with vibrant purple hues and an origami bird garnish, followed by flavors of elderflower, vanilla, and butterfly pea tea-infused gin: the ultimate toast with loved ones.

9. Macaron Ispahan

Equally as delicious as it is beautiful, Pastry Sous Chef Kevin Levionnois’s seasonally inspired, reimagined macaron tantalizes with Rubis chocolate, lychee, raspberries, and lime compote—lending a sweet finish to the most precious gatherings.  

10. Burrata with Citrus & Pistachios 
Four Seasons Resort Palm Beach (Florida)   

Without ever leaving the good old U-S-of-A, head to Palm Beach, where you’ll find Chef Partner Mauro Colagreco and Florie’s Restaurant. This dish, which combines pistachios from Sicily and a creamy burrata and flavorful orange from Florida, brings an Italian twist closer to home. 

11. The Decisive Moment 
Four Seasons Hotel at the Surf Club (Surfside, Florida)  

Another Florida favorite—and this time a cocktail!—is The Decisive Moment, created by Head Bartender Valentino Longo in the Champagne Bar. This cocktail, inspired by the art of photography, is said to be named for the moment that a guest and a bartender meet each other through a cocktail.  

12. Capa GinTonic

And last on the Florida list...the Capa GinTonic! Key lime, juniper berries, raspberry, gala apple, and marigold add intrigue to a classic gin and tonic at the most magical place on earth thanks to General Manager Nga Ly-Henschen. This cocktail was inspired by the warm Spanish pastime of sharing drinks and tapas with family and friends.

13. Tuna Tartare

Chef de Cuisine Jeffrey Zeng looked to the ocean—and a video of deep-fried air—to create his transparent tuna canape, and then made it gem-like with flavor-bursting trimmings: edible flowers, crystal bread, and Kaluga caviar.  

14. Tahitian Unicorn 
Four Seasons Hotel Seoul (South Korea)  

Head Bartender Keith Motsi of the Charles H Restaurant thought of the namesake arriving in Tahiti in 1931 and wondered what he might have seen. Thinking of exotic fruits, colorful flowers, and fantastic creatures, Motsi concocted his mystical tipple to let guests sip the journey.  

15. Paris-Brest

Pastry Chef Igor Melnikov took a chocolatier’s approach to a spin on a French classic: layers of custard dough and a whipped nut ganache crowned with Belgian chocolate lace, made even more heartwarming with a pour of hot cocoa. Yum!

Italian food may not be what comes to mind when you think of a trip to China, but Sous Chef Alessio Pirozzi will make you think again. Using quintessentially Italian and Asian elements—basil, garlic oil, chili powder, dill leaves, and yuzu juice, to name a few—Pirozzi’s elevated pasta dish surprises even the most discerning palates, eliciting true emotion.
